The sun in Singapore has been really good these days - bright and burning hot! My skin's getting a nice glowy tan and I feel much healthier than during those rainy days. Awhile ago, I was downstairs making lime juice for the first time. The first sip nearly choked me! It was so sour and acidic! 5 large limes only made less than half a glass of "pure lime juice", and there I was thinking how pathetic it is. After lots of water and sugar later, that 1/3 cup of lime concentrate (as I call it now) morphed into 2 glasses of pretty tangy and refreshing lime juice. Here's how I made it:
Angie's Summer Lime Juice

Ingredients:
5 large limes (makes 2 glasses)
water
sugar
Procedure:
1. Peel off the skin of the limes and put it into the juicer. The juicer will remove the pulp and seeds. This method is much easier than squeezing with your fingers. You will get approximately 1/3 glass of lime concentrate. (*Beware: this is extremely sour and acidic!)
2. Pour the lime concentrate into 2 glasses equally or into a jug and add about 2 glasses of water. Amount of water depends on how concentrated you want the lime juice to be.
3. Add sugar, stir and taste. The amount of sugar to add depends on how sweet you want the juice to be. I added more than 10 teaspoons of sugar!
4. Add ice or put in the refrigerator to chill it.
5. Decorate the glass (cut a lime in half and hang it on the side of the glass, stick a decorative umbrella in the glass or add a non-pesticide orchid or hibiscus to the glass) and serve.
Inspired by the lime juice, I proceeded to make my own lemon ice water. Cool, refreshing and much less acidic for a hot summer day. Just slice a lemon, and add in two slices of lemon into a jug of ice water. Best served in an Ikea glass jug and Ikea glass. My favorites are the SVEPA jug and glass. :) Top the experience off with a coaster from a stall along the sidewalk of the Seine River in the romantic, dreamy Paris and you got yourself a wonderful summer afternoon in Singapore!
